Plentiful
What to do when the potager is being overly generous and you end up with a glut of zucchini? Most other veggies I grow I either blanch and freeze, or store in a cool place for the winter months ahead. But with zucchini this really is not doable.
This was the dilemma I was faced with yesterday. And it turned out that soup was the answer. I made a huge pot out of a couple of onions, some garlic, a few potatoes and all the zucchini from the potager.
Add some vegetable (or chicken) stock, white pepper, and a dollop of sour cream when served, and the result is a delicious creamy soup. We had it for lunch (despite the rather hot weather yesterday), along with a freshly baked baguette.
All the zucchini I had available made such a big pot of soup that I still had plenty more. I froze the soup in 1 litre bags, to be enjoyed on cold wintry days to come.
By the way, the crochet cushion above is one I made earlier this summer, out of some cotton and cotton/acrylic blend I had in my stash. It did not turn out half bad, I like to think...

just found your delightful blog, delicious soup and crochet...have you ever used zucchini to make a cake...yummy! or we roast them sliced with onions and garlic then frezze to make soup later x
We usually have a glut of courgette as we call them ... But sadly not this year, just one very sad looking plant ... Must be all the rain we've had has rotted everything! Your soup looks delicious, I'll have to go and buy some to try it! xxx
The vegetables from your garden are great and when you cook with them you can really be sure that you have done something good for your family.

I will be visiting a big farmers market later on today, and will have zucchini on my shopping list. It's just a little bit cooler here in New York just now, so the idea of making soup and freezing it for later is very appealing.
The blue and white cotton yarns work so well together, and look particularly wonderful in your home.

Suppen ser jo deilig ut, jeg har ikke hatt problemer me for mye squash i år, men i fjor ble det alt for mye.
Jeg lagde da sauser/fyll till pizza, pasta eller gryter, som jeg frøs ned i passende porsjoner. Kjempegodt og lettvint å ta opp.

That cushion is beautiful too! And I'm glad I'm not the only one with too much squash ( though I have yellow squash not zucchini). I didn't grow any of the other vegetables used in the soup though.
I've just found your blog and have spent the last hour or so looking through it, it's lovely. Norway is on my list of places to go, the sooner the better!
I just chop up my zucchini and put it in plastic bags in the freezer. No blanching. No work! And if they have grown too big, I grate them, and do the same thing, for veggie burgers and zucchini cake in the winter.
Really love the cushion and also the fact that you're back in blog land again. Have only just realised you're back! I love courgette soup. As I started reading your post I was thinking that I'd make soup if I had a glut and sure enough, that's what you did. Looks really yummy. fiona x
I LOVE summer squash soup!
However, there are always zucchini left over. I find, the best thing to do is to just leave big paper bags of them on neighbors' porches in the middle of the night! =]
